Mullinville, Kansas has a population of 197 according to the 2020 Census. It is well known amongst some that it is home to M.T. Ligget (deceased) and his artwork.

It’s also home to a cafe that has been continually run (different owner and different names) in the same spot for 60+ years.

I swung by Holly Kaye’s Country Cafe to grab one of their famous omlettes. I ordered the bacon and cheese omelette. It sounds boring and maybe it was, but it was cooked perfectly and tasted even better (better than perfect). I would even add that the hashbrowns were clearly crispy, but not too crispy. I keep track of a lot of things, but the amount of small town cafes I’ve eaten hashbrowns in has to be pretty high by now. And these things might have been the some of the best I’ve had.

I definitely recommend you check this spot out if you haven’t been or haven’t been in awhile. Everything is homemade. I’m told the biscuits and gravy are made from scratch and excellent.
