Last month (July 2024) Chico’s Mexican Restaurant at 4407 W. Maple St. in Wichita, Kansas, celebrated its 50th Anniversary. I figured it was about time for me to check it out.

When you go, you must order “The Arnoldo Special.” It’s not on the menu and I’m sort of making it up, but roll with me.

When I went, my server was Arnoldo. Turned out that he is the FOURTH generation of the family to work there. His great-grandfather started Chicos. When I was there his grandfather, aunt (current owner) and Arnoldo were all working the shop.

I asked Arnoldo what his favorite item was and it was the Deluxe Fajita Burrito with Chicken. But instead of bell peppers, substitute jalapeños. And instead of Green Chili, the Ranchero Sauce which melts with the cheese better. Additionally you get some of that Jalapeno sauce and can smother a bit on top. And you get rice on the side since beans are already in the burrito. In a word — excellent.

As far as the complimentary chips and salsa — suprisingly, the mild salsa was my favorite. It didn’t have any kick to it, but I really liked the flavor. Arnoldo told me the secret is to mix the mild and hot together. I’ll do that next time.

So, make your way over to Chico’s and order up the Arnoldo special. You’ll be glad you did. I think. And also tell them that TKG sent you. Or don’t. I don’t care and would never know anyway.
