Uncle Ed’s is a food truck based out of Elkhart, Kansas. For those that don’t know Elkhart is as far southwest Kansas as you can get — you can basically stand in three states if you have a wide stance (Colorado, Kansas and Oklahoma).
I’ve had Uncle Ed’s one other time, but I think it’s been a year or two.
I went with one of their more popular dishes. The Tornaders. The Chicken Fajita Tornaders. I was pretty intrigued with the dish. I expected more of a potato wedge dish, but the potato was more of a thin cut potato chip. I thought that was actually a good call since it was so hot out.
I’ve run in Uncle Ed’s Food Truck in multiple places over the years including Liberal, Kansas, Hugoton Kansas, Ulysses Kansas and Garden City Kansas.
Definitely give Uncle Ed’s a try the next time you get a chance.
