In the 1870s, some dudes from Wisconsin wanted to settle in what would become Peabody Kansas. Peabody is a town in Marion County with a population of 936. One of the dudes in that group was Colonel Cone and eventually some people referred to the area as “Coneburg.”

Fast forward to present day. I stopped by Coneburg Grill and Pub in Peabody. It’s a restaurant that has been on my list for awhile and has been open since the 1970s. My server, MacKenzie (probably misspelled) told me that a woman named Shirley originally opened it. And other locals told me that it was primarily a bar at the time. There were several other owners after, but around 14-years ago Lindsey became the owner of Coneburg Grill & Pub after she moved back home, having worked in the service industry in Nashville for quite some time.

I ordered the Harvest Burger. It’s an open-faced burger served on Texas Toast and topped with House Cut Fries Beer Cheese, Green Onion, and Bacon. It was excellent.

I really enjoyed the atmosphere at Coneburg, as well as my brief drive downtown. You can see some photos of the same.
