I really enjoyed my stop at Gillispie Meats in Newton, Kansas at 420 E. Broadway St.
Gillispie Meats is a local meat market. They make their ownn sausage in house and have a lot of local products. And they have some specials like bierocks on Wednesdays for lunch. It was quite good. And the bierocks were very full.
Roger Gillispie opened Gillispie Meats in 1997 and has since passed away. But my understanding is he worked in groceries/meats going back to the 1970s in Newton. Interestingly enough, the butcher that was at the shop when I went told me that the building that houses Gillispie Meats used to be where the Wichita Eagle would take the papers that were delivered in the community.
