I do not recall having a Cabeza taco before this visit to to Tacos El Sol de Michoacan in Wichita.
For those that do not know, “Cabeza” means “head” in English and typically it is the beef cheek part of the cow’s head. I believe at this food truck they boil and slow cook the Cabeza. Man, it was so good and tender. I really enjoyed it.
For what it is worth, Fert The Foodie told me this is the must order taco that you get at this truck, which is parked in Southern Wichita at 3180 S. Meridian outside of Davis Liquor.
