“You don’t want the usual 1/2 order?” Jason Rickard, the co-owner of FioRito Ristorante in Wichita, Kansas asked.

“Gosh darn it Jason!!!! I don’t eat small kid portions. I’ve told you that a million times!!” I hollered. Man. Jason really knew how to get under my skin. “I don’t care what the other bloggers say!! Gosh darn them!!”

“So…you want the entire Porchetta entree? You know that also comes with Cappelletti pasta stuffed with ricotta and thyme and fresh asparagus, right? You want the whole entree?” He seemed perplexed.

“Yea…Jason. If that’s even your real name. And I also want a gosh darn Poutine. Because you know what?!?!?!?” I shouted as I slapped my hand on the bar top. “I’m gosh darn TKG and can out eat all of them. Except Fert. And E.B. And maybe Live Local. And probably Significantly Spicy.”

RESTAURANT NOTES: I got the Porchetta and it was fantastic. The pasta was made with Kernza dough, which is a grain I posted about recently and is a PERENNIAL crop. The sourdough bread also included Kernza grain. I don’t think Kernza was involved with the Poutine. But my gullet was involved and shoved all the fries down it. So good.

On a serious note — it’s hard to say what restaurants are in my top “whatever,” but FioRito has to be there. It’s amazing, never disappoints me, and always has new specials like this Porchetta using an ingredient that peeps might be smart to know more about. FioRito is located at Douglas and Hillside in Wichita Kansas.
