I went to the Bistro at NICHE in Wichita, Kansas. NICHE is a culinary school in downtown Wichita at S. Broadway & E. William St.
You can go in during the week and try out all the dishes that the students are working on. They have a menu with several items and then have a weekly “Student Created Dish.”
I ordered up the “Student Created Dish,” which was created by Chef (or soon to be…don’t know how that works) Stephanie Kirkpatrick. Italian Fried Rice.
This was one of the best meals I’ve had in awhile. I’m not sure how long “awhile” is. I am constantly going places. But what I can say is that when I worked my way into this dish and my lunch partner said “What do you think?” I said “Seriously one of the best dishes I’ve had in a while…if my name ain’t TKG.”

The pancetta, which is crispy, added a lot to the dish.
I THINK that you have to go today for lunch if you want to check the Italian Fried Rice out. Maybe they will bring it back — who knows. But it’s running through today.
I also got the Bistro Smash Burger and fries. I liked the burger alright. The carmelized onions were too sweet for me, but I liked the sauce, which was unique. And the fries that were basically sidewinder potatoes, were crispy and good.
