Recently Doug (my brother-in-law) kicked me out of the basement for a spell. I ended up in Syracuse, Kansas. For those that don’t know, Syracuse is approximately 17-miles east of the Colorado border and approximately 95-miles south of Goodland.

Fun fact — it was originally called Hollidayburg/Holliday and then in 1873 settlers from Syracuse, New York (the fake ‘Syracuse’) changed the name.

There’s an awesome restaurant on the Main Street called Black Bison Pub. It specializes in burgers and steaks and has a full bar. I ordered the Bacon Mac Attack Burger. Yes, it sounded scary. But my server, Miriam (not sure I spelled that right) HIGHLY recommended it and I really enjoyed it.

I also ordered a side of fries because I was told that they are made in-house and they were great. Finally I sampled a couple of salsas that Miriam told me were made in house. Even the mild/medium salsa had enough of a kick that some might say “woooo,” but not your The Kansas Gastronomist. I can handle anything.

I have to say — I love checking out a small community that has something so cool like this. Know the community cherishes it.
