It’s been probably 20+ years since I’ve made burgers this way. But I had a grandma from Wisconsin that always did it this way.
I don’t know if this method was regional or not, but we would prep the burgers and cook them slightly and then pour water into the skillet and let them cook that way on a simmer. I guess in a sous vide fashion.
Anyway, I was inspired on a whim to do that again. I remember as a kid I thought it was awesome. But I think this time I needed to add more salt and pepper to the soak.
