Yessica started Lady Burritos, LLC two years ago. During the first-year she worked two other jobs — a server at a restaurant and a part-time gig in an office.

Three jobs at the same time. What a hustler.

But not just that. She takes a genuine interest in her customers. She was all smiles and so super friendly. And no, not because she was serving TKG — she wouldn’t know TKG from Adam Levine.

I stopped by her pop-up at Hopping Gnome Brewing Company in Wichita (1719 E. Victor St., Wichita, KS 67214) recently and ordered the Breakfast Burrito, the Chicken Mole Burrito and Chips and Salsa. I thought the burritos were a great size. Not too small and not too large — at $5 per burrito I thought it was a good deal. At first I liked the Chicken Mole more than the Breakfast, but I kept going back and forth and just concluded that I liked them equally well. Yessica said her favorite is the Breakfast.

I liked all of the salsas, but my favorite was the standard salsa (rather than the hot). It had excellent flavor. And the chips were definitely homemade. Well, all of it was. You could taste the freshness.

I know it took me awhile to make it to Lady Burritos, Yessica, but I promise it won’t be my last. I’m sure your mother is proud of you. Not just for busting your ass to make your dreams come true, but for being the good person I can tell you are in observing how you interact with your customers.
