So, the second photo is Iberian Ham (in Spanish it is Jamón ibérico). It’s a cured leg of pork from Spain.
If you have ever heard of REAL Wagyu as it relates to the beef world — well this is the “Wagyu” of the ham world. Seriously. It was illegal to import into these United States until 2005. Basically we lived 70+ years of my life without Iberian Ham. Once the meat is salted and dried for 6-weeks, it is cured for 1 to 4 years. This is something you cannot just get anytime you want.
Naturally, when I stopped by Lottē in Wichita, Kansas located in Downtown Wichita, I had to order some Iberian Ham as an appetizer. It came with almonds and a nice sliced cheese in olive oil.
For my entree I ordered the Grilled Strip Steak, medium rare. It came with this rectangle potato with this awesome salad. It was all EXCELLENT. And for dessert I ordered the Pacifico Stripped Bass with fennel and beets.
If you have not checked out Lottē yet, that’s fine. Keep making bad decisions.
