On the west side of Wichita, Kansas there’s a Mexican food truck called Tacos Uruapan. It’s always parked at Star Lumber on West Street near W. Maple St.

The Chicken Burrito? Holy cow. It was AMAZING. Straight up it was one of the best burritos I’ve had in quite some time. The tortilla is cooked with a layer of cheese on the inside so that it has a slight crunch. The rice and beans is just perfect. I got the chicken burrito. I know it sounds basic, but I said “Chef’s choice” and that’s what I got. And dang I really liked it. And the salsas that came with it just added to the mix.

I also saw that the truck had Birria Ramen and I’m a sucker for Birria Ramen. Here’s the thing. I was not a fan. First, if you look at the second photo of the bowl of ramen, you’ll see a white “chunk.” That’s cheese. Maybe I’m not an expert in Birria Ramen, but I’ve never seen cheese in Birria Ramen, or at least not cheese that melts (maybe cotija cheese?). And that consistency does not go well with ramen. The birria itself was decent. But the cheese in the ramen along with the flavor were not my thing.

So…basically I found a spot to grab what I honestly think might be one of my favorite burritos. But I also will not order the Birria ramen again. With that said…maybe I’m ignorant and maybe you’ll enjoy the ramen.
