The Brandin’ Iron in Florence, Kansas is housed in an old Opera House that was built in 1883.
It’s amazing to me that 140+ years ago, this city with a population of 394 had an Opera House and was one of the only in Kansas at that time. Makes sense. Kansas would have been a young’en. For those that do not know, Florence is located around 60 miles northeast of Wichita off of Hwy. 50.
When I went I ordered a Burger and the Macaroni and Cheese. I went with the burger because the owners (Troy and Sarah Dawson) also own Doyle Creek Ranch and so they raise the beef the restaurant serves. The burger was excellent. I went with the Mac because a Gastrofan quite some time ago told me to get the Mac (shout out to the Grease Guy, wherever you’re at!). And dang he was right.
I actually asked my server, Naomi, what cheese was used in the Mac. She said it was a secret, but that it included goat cheese. Regardless, it was fabulous.
This was such a cool restaurant in a cool building in a cool town.
