What does a real Gastronomist do when he knows he is passing through a small town and needs something to eat, but is running short on time?
He calls Humble Pie in Pratt, Kansas (located on the main Highway going through town) to place a carry-out order so that he can support local, but also eat on the run like the renegade that he is.
I called Humble Pie and a cool chick named Kiana (I have no clue if I spelled that right) answered. She had some of the best damn phone customer service I have had in a while. I asked for a recommendation and she gave it. I then told her “I give you carte blanche authority to pretty the pizza up as you wish,” and she sort of got excited. Said she would personally make it. And then when I showed up she checked in with me several times and told me “I made the pizza with love.”
Now, on to the food. I ordered the Deluxe pizza. Size small. It came with beef, pork sausage, pepperoni, green peppers, mushrooms, onions and cheese. The crust here is sort of the cracker style or “Mid-West Tavern style.” I thought it was a tasty pizza and liked that the cheese was BAKED OVER THE TOPPINGS. That is how it should be done when it comes to “American” traditional pizzas. I also ordered the Lasagna which was pretty easy to eat while driving. I don’t know if they make their sauce in-house or not. Probably not, but the sauce had a nice distinct flavor. It was definitely a dish I would order again.
