One of the many things I love about this restaurant (by the way, the co-owners Jordan and Jason Rickard were recently semi-finalists for the coveted James Beard Award!!) are the weekly specials that are rolled out.
I saw that FioRito Ristorante in Wichita had a smothered breakfast burrito and it looked tasty. The innards consisted of bacon, eggs, cubes of white American cheese, jalapeno, corn, with a guajillo cream sauce. And it came with some country potatoes. It was available for the Saturday and Sunday brunch (10am-2pm) last weekend and it was so dang good. That guajillo sauce has a smokiness to it that I just love.
I highly recommend FioRito. I am definitely a big fan of the food, the atmosphere and the ownership. It’s located at the corner of Hillside & Douglas.
