I don’t really care about the quesabirrias. Don’t get me wrong, they were very tasty. But that is really not the point. The point is the story.
And the story is about a young gal that busts her ass with a smile on her face every day. She owns Lady Burritos, LLC in Wichita and started off making bomb burritos a little over two years ago. Bomb burritos that she started selling in random spots like gas stations at times ordinary humans are barely rising from their slumber. Which means she started cooking those things when we were still mouth breathing in our beds. It is a story of a girl who, when her father is at risk of deportation, does not ask for a handout to get some $ for an immigration attorney, but instead gets to work and makes even more burritos and quesabirrias.
But the story does not end there. No. Instead another character enters the picture – the owner of Pinole Blue. One of the more optimistic people I have ever met. Who grinds almost every day without complaint. And when he meets the gal, what does he do? Does he move along because he has his own business to take care of, especially with sales down in this economy? No. He has empathy. He donates all of the stone ground corn tortillas to the gal so that she can make a massive amount of burritos and quesabirrias. And she does it at the Pinole Blue location.
So, that is the story. The story of an immigrant that busts her ass every single day, that continues to have a smile on her face despite familial adversity and asks for nothing – other than to try her burritos and quesabirrias. And the story of a dude that puts others above himself.
I think that is the point of this post. If you get it, you get it. If you don’t, you don’t. But if you do get it, then consider supporting either of these two small business owners that make our community and country a beautiful place to live.
P.S. be sure to follow Lady Burritos, LLC to see when she will be doing a pop-up or when you can pick up some yummy food from her location at Pinole Blue. And be sure to follow Pinole Blue and try out some of the organic stone ground blue corn products like chips, tortillas, drink mixes, energy cookies, etc. You can order them online on the website as well, which I will link to in the comments.
