This is one of those taco spots in Wichita that if you go to, well then you know what good Mexican tacos are. And if you don’t go, well, draw your own conclusion.
Jimenez Tacos is in southern Wichita in the Plainview neighborHood (2787 S. Roosevelt St.) and is cash only. Simon, the owner, is such a nice guy and just always happy to have you trying his tacos. Another guy that is always there is Alfredo. I think he is Simon’s son, but I’m actually not 100% sure. I need to ask him. Regardless, he is always super gracious and happy to have people there like Simon.
During Fert The Foodie’s 8th Annual Taco Tour I picked up a Barbacoa taco. I love that the tortilla is grilled a bit and so there is an ever slight crunch. And there are always excellent salsas to pair with the lime, cilantro and grilled onions.
